Subject To Change is a relatively new project on the scene, having produced their first vintage in 2017. The founders have an impressive resume behind them, including stints at Big Basin and Kivelstadt Cellars. They're a so-called "zero zero" winery, using zero artificial yeasts and zero sulfur. They're a bit more "natty" of a natural wine producer and work exclusively with dry-farmed, organic or biodynamic vineyards primarily from Mendocino County.
The vineyards and farmers they work with are selected according to a multi-point value system, ranging from organic farming, the absence of glyphosate (Roundup), and fair treatment and pay for their farm workers.
Now in their third vintage, this "Tasty Waves" is the first-ever release and is a sparkling piquette – essentially a wine-based beverage made by re-fermenting the grape solids after winemaking, like the second dip of a teabag. Made from Zinfandel and Sauvignon Blanc grapes from Mendocino County with a bit of bubbles left over, the result is a fresh, spritzy and light red sparkler.
Perfectly made for a lazy daytime Sunday brunch or an outdoor jaunt, it's bottled with a crown cap for easy access. Totally unique, totally natural, and a welcome bit of whimsical bottled fun. Enjoy!
