This superb, prestige Champagne is a unique, exciting project from the Avize Viti Campus, the foremost winemaking school in Champagne. It's a seriously formidable institution; approximately 80% of the current winemakers in Champagne are alumni of Avize Viti.

Pronounced sawn-gher, Sanger is a portmanteau of "Sans Guerre" ("no war") and represents former students, professors, and their myriad holdings in Avize, Champagne's "Rodeo Drive." A list of growers in Avize reads like a "who's-who" – among others, grower Jacques Selosse is an Avize neighbor whose wines (if you can find them) trade for $500/bottle up.

Avize's high concentration of "Belemnite" chalk, the fossilized remnants of prehistoric cuttlefish dating back some 70 million years ago, makes for intensely mineral, knife-edge Champagnes in the Côte des Blancs. Sanger's "Triangle Minéral" comprises three points: single vintage, single grape, and single plot in Avize. Smoky minerals, lemon custard, crème brûlée, apple skin, and flinty minerals round out this nuanced, low-dosage, gem of a sparkler.
