Régnier-David "Le Paradis" Saumur Rouge 2016

This Cabernet Franc hails from the bucolic Loire Valley region, from Domaine Régnier-David. At the time of its founding in 1962, when "conventional" farming was the standard (read: loads of nasty chemicals in the vineyard and winery), Maurice Régnier decided to eliminate all pesticides, herbicides, etc. and convert to organic practices throughout, truly ahead of his time!

Those practices continue today under Jean-François. The wines are fermented in cement tank with all natural yeasts, yielding fresh, terroir-driven, nuanced reds from the sandy yellow-chalk soils of Saumur.

Clocking in at only 12.5% abv, this Cab Franc shines with fragrant violets, hibiscus, graphite, and peppercorn with crunchy red fruit and a suave, savory oregano-infused finish. It benefits greatly from the lauded 2016 vintage, with wonderful balance of fruit ripeness,  earth, and definitive terroir.

Cabernet Francs are some of the most satisfying drinks at the table, which neither overwhelming nor shy away from most cuisine. It doesn't get much better than this for a weeknight red!
