Cesanese is the variety here, an ancient grape dating back to at least the 15th century in the Lazio region.
Its aromas of bing cherry, sweet red pepper, roobois tea, and smoky, volcanic minerality really start to come out after an hour's opening. It's a fuller bodied red with character, balanced tannins, and that classic Italian tart acidity on the finish. The wine is aged in large, old, French barrels (tonneaux), adding depth and richness without overpowering the unique qualities of the Cesanese grape.
