This is one of our favorite Champagne houses, run by the phenomenal Laurence Ployez. Since 1930, the Ployez family have been crafting artisanal Champagne in their idyllic hamlet of Ludes, in Champagne.
Like so many growers in the region, her family's history significantly predates their commercial beginnings. An intricate, centuries-old network of chalk caves, called crayères, lie beneath their estate buried 25 meters below-ground, ideal for aging their cuvées before release.
Ployez-Jacquemart's "Dosage Zéro" is a multi-vintage (synonymous with non-vintage) cuvée based on a blend of Chardonnay and both Pinot Noir & Meunier, with no added sugar in the final "dosage," resulting in a supremely elegant bone-dry Champagne with notes of wet rocks, yellow pear, Granny Smith apple, and smoky-almond notes. This is for fans of ultra-minerally, sleek, electric bubbles! The fruit comes from premium Premier and Grand Cru vineyards from the top villages of Champagne: Ludes, Mesnil, Vertus, and others, contributing finesse and complexity.
