Organic Champagne-method bubbles for less than $30!
We love our natural bubbles here, and we're very excited to share today's wine. Founder and sommelier Zach Pace discovered this gem while working the floor at a Mission district restaurant in 2019; ever since it's been one of our most exciting finds in California sparkling wine.
For fans of dry, brisk sparkling, it's all here: in the winemakers' words, "electric acidity," salinity, grapefruit zest, peach pit, and a dry, bright lemony finish. Approachable, great as an evening aperitif, amazing with food – it fires on all cylinders.

Maître de chai means "cellar master" in French, and winemakers Marty Winters and Alex Pitts are indeed masters of their craft. This wine is produced in the méthode traditionelle – the same method as Champagne. Their aim is to to let the terroir speak for itself, with as little intervention as possible. With just 2 grams of dosage, this is an "extra brut" in spirit; it's all about naked terroir.
Less than 200 cases were made, and most of that was poured by the glass at Bay Area fine dining restaurants since its release in 2019.
