A tremendous, mouth-watering sparkler from wife-and-husband team Clémence & Cyril Jeaunaux-Robin.
Le Talus ("the slope") de Saint Prix is a village in the pastoral Petit Morin Valley in the Côte des Blancs region of Champagne. This is a "grower" Champagne, biodynamically farmed and totally organic. In fact, the vineyards directly abut their backyard; their children play in the vineyards. It's about as hands-on and hand-made as one can get – the grapes are pressed in an old-school wide basket press in their garage. 60% Pinot Meunier, 30% Pinot Noir & 10% Chardonnay, fermented partially in oak foudres barrels for a rounded, rich, expressive, yet salt-lick dry finish.
“Disgorged in March 2017 with just over five grams per liter dosage, the NV Extra Brut Le Talus de Saint Prix is beautifully expressive, bursting with aromas of yellow orchard fruit, acacia honey, dried white flowers and chamomile. On the palate, it's medium to full-bodied, with a fleshy but succulent core of fruit, bright acids, a pinpoint mousse and a penetrating, distinctly mineral finish.
