Jean-Marc Gilet's holdings in Vouvray date back to an astounding 1914. The porous, chalky soil here is called tuffeau – subterranean wine caves are carved out of the rock deep below the surface, perfect for naturally regulating temperature and aging the wines. Chenin Blanc is the predominant grape in Vouvray for good reason; the terroir coaxes out its juicy stone-fruit qualities and razor-sharp acidity, making for wines of finesse and distinct sense of place.

This lovely sparkler exudes toasted almond, honeysuckle, flint, and ripe pear with a spicy, minerally precise finish. It's made in the traditional method (read: the Champagne method), imbued with the same care and quality, for a fraction of the price.
