White flowers, Asian pear, and green apple on the palate, with a flinty, mouth-full-of-rocks finish like drinking from a mountain stream. Pure, refreshing, and brisk. The terroir here is pure alpine, with plenty of intense mountain sunshine ripening to attenuate its crystalline briskness. 

Crémant is a type of French sparkling produced in the "traditional method" (the Champagne method) with a region's local varieties. The blend in these bubbles is primarily the local Jacquère, with 20% each of Pinot Noir and Chardonnay.

An incredible history lives on at this domaine: the estate was founded in 1830; intermittently punctuated by geopolitical strife and two world wars, Célestin Carrel returned to his native region from a P.O.W. camp to resurrect agricultural operations, gradually transitioning fully to winemaking in the '70s. Today they farm responsibly, looking to maintain harmony with nature and minimal use of mechanical inputs.
