Red raspberry, star anise and spiced cherries jump out immediately; after decanting a whiff of freshly-tanned leather starts to emerge. The best Burgundy have a hint of what they call sous-bois – French for "forest floor." This Bourgogne has a delightful hint of that woodsiness and soft earth.
Domaine Romain Collet is a multi-generational producer known for his stunning, world-class Premier and Grand Cru Chablis; this micro bottling comes from an organic single vineyard his family owns. It's a warmer site, and in his hands he produces a Pinot with finesse and immediacy, yet with cellaring potential as well. It's fermented with native yeasts in neutral barrel and aged for a year before bottling. Subtle, complex, and juicy without being overripe, this Pinot Noir provides true drinking pleasure outsized to what it costs.
