We are extremely selective when it comes to offering Champagne. It's one of the most exciting regions in France right now where a new generation of young, innovative farmer-winemakers are creating amazing organic Champagnes of character.
This is one of those: Hannah and Raphaël Piconnet of Domaine de Bichery inherited decades-old family vineyards and, instead of selling fruit to the bigger brands, decided to start crafting their own wine from their organically-farmed, limestone fossil-rich soils in the Aube, in southern corner of Champagne.
The wine is a study in these limestone soils: focussed and electric, with freshly-cut white flowers, wet rocks, apple and slate. This has all of that Extra-Brut dryness and definition Champagne lovers crave, like licking an electrified candied green apple.
This is a "grower Champagne," meaning the winemakers use fruit from only their own vineyards; it is not uncommon for larger estates to buy grapes (and even juice) from all over the region. Not only is this estate a grower, they are members of the Association des Champagnes Biologique – a certified-organic, farmer-led coalition dedicated to natural artisanal practices.
They made a minuscule 167 cases of this wine for the entire globe; a mere handful are available in the U.S. – only from Prologue Wine Co.
