Jean-Paul Brun's estate, affectionately known as Terres Dorées, for the golden stones found in the vineyards, is in the tiny village of Charnay, in the south of Burgundy. He founded the domaine in 1979 with just four hectares of vines. With his devotion to minimalist farming and winemaking he was incredibly ahead of his time; his philosophy of organic farming and unadulterated wines took years to come into vogue. Today he's now regarded as one the "O.G.s" of so-called "natural" winemaking, although if you used that word he'd likely scoff – to him, it's simply the proper, time-honored way to do things.
By law, "crémant" is a category for sparkling wine made in the traditional "Champagne" method outside of the Champagne region itself. This process dictates all the finesse, individual attention, and devotion to quality of Champagne at a fraction of the price.
And this is a blanc de blancs – sparkling wine made from 100% Chardonnay, and a fully dry and distinguished example of southern Burgundy terroir. Full of peach skin, lemon custard, macadamia, and lean mineral edge, it straddles richness and mouth-watering freshness perfectly. Year in and year out, he makes one of the most satisfying bubbles and has held the line on pricing, remaining one of the most outsized value/quality ratios out there. Who would say no to that?!
