The Penedès region in Catalunya, Spain is affectionately known as "Cava Country." Coming from the root word for "cave," Cava is produced all over Spain, although most comes from this tiny corner of Catalunya, made primarily from the local "holy trinity" of grapes most: Xarel-lo, Parellada, and Macabeo.
Can Desecgrut is a winery part of the "Corpinnat" syndicate of winegrowers, a group dedicated to quality embodied in a number of practices: organic farming, hand harvesting, and longer aging periods than the minimum required. This is Spain's answer to fine sparkling wine, a natural reflection of the region's historical grapes, terroir, and tradition.
The 2017 Reserva bottling has been aged for a tremendous two years in bottle before release, far longer than the minimum required for the designation. And with no added dosage (Brut Nature), it's a fiercely dry and naked example of their 30 hectares of vineyards in Penedès, all organically farmed and treated with the utmost care.
The result in the glass is a vibrant sparkler, imbued with green apple, tangerine peel, chalky minerals, and a hint of nutty toastiness. An amazing "anyday" bottle of bubbles and a screaming value!
