Most sparkling wine of the world follows the Champagne playbook, focusing on long aging on the spent yeast to accentuate the "developed" family of aromas of flavors: brioche, toastiness, and nuttiness. The Carboniste project takes a different approach in producing a wine that's all about the fresh, primary flavors with some fun effervescence. A bubbly that doesn't take itself too seriously, yet is seriously delicious. From the organically farmed, old-vine Gomes Vineyard in the Sacramento River Delta, this 100% Albariño is bright, ultra-dry, and brisk, full of white peach, passionfruit, wet rocks, and saltine cracker flavors. It simply begs for winter oysters or crab!
According to Jacqueline, Carboniste “has accomplished our goal of making a wine that is truly inspired by the terroir that we have in California. We don’t want to make something Champagne-like, but just the opposite." I couldn't sum it up better.
